Black Beans & Rice w/ Corn
1 can black beans
1tbs onion powder
3 cloves garlic, minced
2tbs vegetable oil
1tbs chili powder
1tbs oregano
1/2tsp cinnamon
black pepper
1c long grain rice
2c water
1. Rice: use the 2:1 water:rice ratio. Boil water. Add rice. Stir 1 min. Turn heat low as possible. Cover. Cook 20 minutes. Perfect rice.
2. Beans: add veg. oil and onion powder. Stir together. Turn heat on low as possible. Add garlic. Slightly increase heat. Add beans. Add chili powder, oregano, cinnamon, and black pepper. Increase heat to medium low. Simmer.
3. Corn: cook as normal. add dashes of garlic powder, red pepper, and oregano.
4. put corn on beans on rice.
